Market to Table - September 18, 2008

Sorry, this is going to be one of those weeks where my diet is pretty boring. I had a medical procedure done yesterday which meant I was on a liquid/clear fluid diet for almost two days. Lucky me. I did manage to sneak in a few yummy meals though. 

Breakfasts this week consisted of banana yogurt (non local 'naners with my homemade yogurt made from raw, local milk) and a handful of Texas almonds. I don't like a big meal when I get up and this is just enough to hit the spot and give me energy through lunchtime. 

Lunch tends to be my big meal of the day and the meal in which I sneak in most of my vegetable servings. For instance, check out Monday's stir fry. Onion, celery, sugar snap peas, broccoli, mushrooms, and yellow squash stir fried in olive oil with just a little salt and a tablespoon of almond butter for flavoring. Good stuff! Local items included the onion, mushrooms, and yellow squash.

Dinners are generally a quieter affair. Some nights I had a bowl of veggie soup (all local veggies), other times just some local peaches (pulled from the freezer) with some of my homemade 100% whole wheat bread toast. One night, though, I went all out and made breakfast-for-dinner. Basically, I stir-fried some red potato with onion and mushrooms; then just when the veggies started turning soft, I dropped in a fresh, local egg. Mmm. Yeah, it tasted good too! And it was 100% local!

Now that I'm allowed to eat solid food again, there will be lots more to come. Melinda at One Green Generation posted about roasting veggies last week and ever since, I've been hungry for 'em. And having missed last week's farmers market due to Hurricane Ike means we're due for a full bike load of farmers market goodies this Saturday. I can hardly wait to see what's fresh off the farm this week!

My post from last night was 100% local... down to the potatoes which grew in my back yard!!! We calculated out the mileage and nothing was from further than 30 miles away... I was just so so so excited!!!

It sounds like even in spite of your tests you have been able to feed yourself mighty well. And I don' think your meals sound boring at all.

We have lots of local goodies on the table this week. Tonights dinner will be a mostly local Huevos Rancheros. Mmmm, local eggs, potatoes, peppers, onions, and garlic. The only non-local items will be the beans which were purchased through an organic co-op.
